MARANG

Marang (Artocarpus odoratissimus) is a
naturalized, evergreen, fruit-bearing tree species that can grow up to 25 m in height.

Marang belongs to the genus Artocarpus, which includes Langka (A. heterophyllus), Rima (A. altilis), Kamansi (A. camansi), Antipolo (A. blancoi), and Gumihan
A. sericicarpus).

This specie is cultivated in many
provinces in the Philippines for its edible fruit, considered one of the superior-tasting Artocarpus fruits.

CHARACTERISTICS/PROPERTIES:

The fruit, round or oblong in shape, has distinct proad hairs that become brittle with maturity.

It also emits a chemical-like odor that intensifies as it ripens, hence its scientific name. The skin is easily peeled with bare hands, revealing white pulp that is soft, juicy, and sweet. Additionally, it contains edible seeds with a nutty flavor when
roasted or boiled.

Marang is popularly enjoyed as a dessert fruit. However, unripe or immature marang can be cooked as a vegetable, usually with coconut milk.

On the other hand, ripe marang can be processed Into desserts such as ice cream, candies, jams and pastries.

Despite its popularity, Marang has a short shelf life, limiting its distribution and making it expensive in markets outside its locality.

The fruit turns brown and soft as it ripens. Once the fruit  opened, oxidative browning occurs; thus, it must be consumed within a few hours after
opening as it deteriorates rapidly in taste.
